The only thing better than corn and bacon, is corn wrapped in bacon.
And the only thing better than corn wrapped in bacon is corn wrapped in bacon that’s been smothered in a chipotle-honey glaze. It’s a great meal for cooking outdoors when you’re craving something that’s just a little bit different from your standard barbeque fare.
Instructions:
Take the bacon and wrap one piece around each ear of corn, making sure to fasten it at each end with a toothpick. Put it to the side as you next prepare your delicious chipotle-honey glaze.
Throw the chipotle peppers in a blender and grind them until they’re smooth. Then mix them in a bowl along with the honey and melted butter. To prepare your cooking grill, spray the grates with cooking spray and place over coals that are medium hot. The best part is next as you take the chipotle-honey glaze and brush it all over your bacon-wrapped corn.
Place your corn on the barbeque and grill for about 20-25 minutes until the corn is cooked and bacon is crunchy. Make sure to turn the corn approximately every 2 minutes while it’s on the grill and to continually coat them with the glaze.
